I love sweet potatoes. And I love smoothies. But I'd never thought to combine the two...until now...and it's a great combo! Especially for this time of year, when we still crave a bit of warmth in our bellies. Steam one medium sweet potato, thickly sliced in a bit of water with a couple pieces of ginger until tender. In your blender put about 1 cup of almond milk (you will have to adjust depending on the size of your sweet potato), a sprinkle of cinnamon, some gratings of nutmeg, 2 Tbs of tahini, and about 1 tsp of vanilla (for those of you who get my newsletter I forgot to include the vanilla, but really it's tasty either way). Add in the drained cooked sweet potato and blend. Add more almond milk, if needed, and enjoy. I like to make it immediately after I cook the sweet potato, so it makes a warm smoothy. Yum!
